STIR FRIED CHICHEN WITH BASIL AND GARLIC


Preparation Time : 15 min
Cooking Time: 10 min
                                                                       

Ingredients:  


Chichen breast , cut into thin slices : 500 gm
Garlic : 8
Basil leaves :10 - 15, finely chopped
Spring onion : a small bunch ( 4-5) Chopped
Ground nut oil: 2 tbs
Button mushoom : 100 gm, sliced
Red dry chilli: 2
Salt : as required
Corn flour : 2 tbs dissolved in 1/2 cup water
Dark soy sauce : 2 tbs

Method:

Heat oil and saute the red chilli and garlic for about 1/2 min.
Add thinly sliced chicken and stir continously on high flame for 2 min or until chicken turns into little brown in colour.
Add sliced mushroom and saute for a while. 
Add the basil and chopped spring onion.
Cook for 2-5 min adding soy sauce. 
Then add corn flour.
Mix it well and let it dried up. 
Serve with steamed rice.

Carrot and Coconut Muffin

Carrot and Coconut Muffin

On a rainy lazy afternoon lying on the bean bag with a novel in hand, I was thinking of preparing something different. There was only 5/6 carrots and a 1/2 cup grated coconut in my freezer.  So thought of trying muffins with carrots and coconut.
Here is how I bake the muffins.
Preheat: 180F
12 Muffin
Bakin time : 20 -25 min











Ingredients :

1 1/3 cups grated carrots
1/2 cup grated coconuts

Dry  Ingredients :
1 1/3 cups all purpose flour
1/2cup sugar (3/4 cup powdered sugar)
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1tsp cinnamon powder

Wet Ingredients :
2 large eggs
1/2 cup vegetable oil or  safflower oil
1/2 tsp vanilla extract

Methods:

In a large bowl whisk together all the dry ingredients. I prefer to sieve all the dry ingredients.
In another bowl whisk together all the wet ingredients ( eggs, oil and vanilla).
Fold the wet ingredients into the flour mixture.
Then fold carrot and coconut into it. 
Evenly divide the batter between the prepared muffin cups. 
Bake for 20-25 min or until it is cooked.

Serve with  dollop of cream cheese frosting .

Chicken with Capsicum

Chicken with Capsicum

Preparation time : 10 min
Cooking time : 10- 15 min


Ingredients: 



  • Boneless chicken pieces - 200g
  • Lime Juice freshly squeezed - 1 table spoon
  • Juice of ginger - 1 tea spoon
  • Salt to taste
  • Corn flour - 1 table spoon + 1/2 table spoon
  • Onion -1 medium size
  • Capsicum - 1
  • Dark Soy sauce - 1 table spoon
  • Paprika / Kashmiri red chilli powder - 1tea spoon
  • Oil- 1 table spoon and for deep frying
  • Dry red chilli-2
  • Garlic - 2-3 clove



Method:

  1. Marinate the chicken with lime juice , ginger , paprika, salt and corn flour.  Keep aside.
  2. Cut the Capsicum and onion into chunks.
  3. Cut the dry red chilli into two three pieces.
  4. Mix soy sauce and another 1/2  table spoon adding 2 table spoon water. Mix it well.
  5. Deep fry the chicken pieces putting enough oil in the pan.
  6. Take another pan and put 1 table spoon oil.
  7. Add the dry chilli pieces and the garlic into the hot oil. 
  8. Then add the onion and capsicum chunks and stir it. Add salt. 
  9. Add the fried chicken.
  10. Stir it .
  11. Then pour the soy sauce and corn flour mixture. 
  12. Stir it continuously and let it dry . 
  13. A spoon full of red chilli sauce can be added here- optional.
  14. Serve with your favourite dish.

Carrot and Walnut Cake

Pre heat 350 F ( 180 degree C )
Baking tray - 23  5 cm - Butter the tray
Baking Time 30 - 40 m

Ingredients:


  • 1 cup walnuts
  • 2 1/2 cups grated carrots
  • 2 cups flour ( wheat + Maida)
  • 11/2 tsp Baking Powder
  • 1 tsp Baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon powder 
  • 4 large egg
  • 11/2 cups powdered sugar 
  • 1 cup vegetable oil
  • 2 tsp vanilla essence

Method:

1. Toast the walnuts for about 8m . Let it cool and chop it.
2. Whisk together the flour, baking powder, baking soda and cinnamon powder.
3. In a separate bowl beat the egg. 
4. Add sugar gradually and beat until it light coloured.
5. Pour oil in a steady stream and add vanilla extract. Beat it well. 
6. Add the flour mixture and mix.
7. With a spatula fold in the grated carrots and nuts. 
8. Pour it into the prepared baking tray.
9. Bake for 30 min  Or  till done.
Checked if cooked by inserting a toothpick in the centre comes, and if it comes out clean it is done.

Note: Baking time might vary from oven to oven
