CHICKEN CURRY
My all time favoriteIngredients:
- Chicken piece 10 medium or 1 whole chicken cut into medium pieces (1 kg )
- ( I like to use chicken thigh piece)
- Onion 4 medium (finely chopped )
- garlic 12 clove
- ginger 1 inch
- red dried chilli 4/5
- black pepper 10
- cumin powder 1 teaspoon
- coriander powder 1 teaspoon
- turmeric powder 1 teaspoon
- tomatoes 2
- cardamom 2
- clove 2
- Cinnamon 1 inch long
- oil 3 / 4 tablespoon
- Salt to taste
Preparation :
At first make a paste of ginger and garlic and keep aside. make a paste of red chilli , black pepper, turmeric powder, cumin powder and coriander powder with water. keep it.
Method:
Take a heavy based pan or kadai and heat oil in it over medium heat, when it is hot (not smoking hot) add cardamom, cinnamon and clove. Immediately, add the finely chopped onion and fry till golden brown. Add ginger garlic paste and fry for about 2 minute.Add the cumin & coriander paste and fry it well (the masalas well). If needed put some water and fry till oil comes out from the masalas. Then add the chicken pieces. Stir the chicken with the masalas and cover it . Put salt. Stir occasionally. when it is half cooked put the chopped tomatoes. Cover it again and cook till the tomatoes cooks and melts till its skin gets separated. Add 1 cup water and cook it for another 15 - 20 minute over medium heat or cook till the chicken is done .
