Coconut Cookies
Preheat: 350F or 180CFor 13 min to 15 min
Ingredients:
- All purpose flour-1 1/2 cups
- Cornflour-3 tablespoons
- Butter-1/2 cups = 113 grams (room temperature)
- Egg- 1 large (room temperature)
- Vanilla-1 teaspoon
- Baking Powder- 1/2 teaspoons
- Baking Soda- 1/4 teaspoons
- Jaggery Powder- 1/2 cups( I used organic and little chunks, not fully powdered)
- Powdered Sugar- 1/2 cups
- Coconut flakes- 1/2 cup + 3-4 tablespoon
Method:
- Sift the flour with baking powder and baking soda. Keep it aside.
- Using an electric mixer, mix the butter 🧈 , jaggery and sugar properly.
- Add 1/2 cup coconut 🥥 and mix
- Add the egg 🥚 and vanilla and mix until smooth.
- The add the flour into it and gently mix. Do not over mix (I usually prefer to mix it with a rubber spatula)
- Now using your hand or a spoon make small size ball and cover with coconut flakes.
- Cover the cookie tray with a butter paper
- Put the ball on the tray and bake for 13 min- 15 min (turn the tray in between).
