      CHICKEN CURRY  

My all time favorite 


Ingredients:



  • Chicken piece     10 medium or 1 whole chicken cut into medium pieces (1 kg )
  • ( I like to use chicken thigh piece)
  • Onion              4 medium (finely chopped )
  • garlic                12 clove
  • ginger              1 inch 
  • red dried chilli 4/5
  • black pepper 10 
  • cumin powder 1 teaspoon
  • coriander powder 1 teaspoon
  • turmeric powder 1 teaspoon 
  • tomatoes  2
  •  cardamom 2 
  • clove   2 
  • Cinnamon  1 inch long
  • oil  3 / 4 tablespoon
  • Salt to taste



Preparation :


 
At first  make a paste of ginger and garlic and keep aside. make a paste of red chilli , black pepper, turmeric powder, cumin powder and coriander powder with water.   keep it.


Method:


Take a heavy based pan or kadai and heat oil in it over medium heat, when it is hot (not smoking hot) add cardamom, cinnamon and clove. Immediately, add the finely chopped onion and fry till golden brown. Add ginger garlic paste and fry for about 2 minute.Add the cumin & coriander paste and fry it well (the masalas well).  If needed put some water and fry till oil comes out from the masalas. Then add the chicken pieces. Stir the chicken with the masalas  and cover it . Put salt. Stir occasionally. when it is half cooked put the chopped tomatoes. Cover it again and cook till the tomatoes cooks and melts till its skin gets separated. Add 1 cup water and cook it for another 15 - 20 minute over medium heat or cook till the chicken is done .

Mozzarella chicken



 Mozzarella  cheese  Parmesan chicken




I like to try different type of recipes.When I go to the library always search for cook book.One day  I brought a cook book from the library and my son pointed   a picture of chicken and he request me to prepare that. It was a picture of Golden Parmesan Chicken. I did  not find  all that ingredients in my refrigerator at that time. There the main ingredient was Parmesan cheese.So I tried with my ingredients  to prepare the Parmesan chicken without Parmesan Cheese.

Ingredients:


  • 4 skinless chicken breast pieces
  • 1/2 cup fresh bread crumbs.
  • (I take white bread . Put it in hot pan for 2 minute. Turn off the gas immediately. Turn the bread up side down for another 2 minute.bread should not be brown. It should be like hard toast.Then rub it with a knife.You will get the fresh bread crumbs.)
  • 1 cup finely grated mozzarella  cheese
  • 2 egg beaten
  • 4 table spoons butter
  •  1-2 garlic clove , crushed
  • ( If you do not like the smell and taste of garlic, no need to mix the garlic with the bread crumbs.)

  • salt and
  • 1/2 tea spoon ground black pepper



 Preparation:


  1. Mix together the bread crumbs, cheese, salt and ground black pepper in a shallow dish.
  2.  Dip the chicken pieces in the beaten egg and then into the bread crumbs mixture.
  3. Place the chicken in a single layer baking sheet and chill for 30 minutes.
  4. Pre heat the oven to 180degree C /350 degree F
  5.  Drizzle the melted butter over the chicken pieces
  6.  Cooked for about 20 minutes or until crisp and golden.


Serve hot with your favorite salad.

about me

I am a wife and a mother of two beautiful kids. They always encourage me to cook. They like to share thier lunchbox and snacks with thier friends. I have a good collection of cookbooks and like to take ideas from them and try to make a new dish. I watch cooking shows in the TV.

I am trying to write some authentic Assamese and Bangali dishes from my mother and my mother in law and from the elders. Those dishes are mouth watering and very very healthy on the other hand.

My hubby encourage  me to collect the authentic Assamese recipes . One day my 10 year old asked me to write down the recipes that he can use it later on. That is my turning point and I start writting .
