Chicken with Spinach

 

Chicken & Balcony Garden Spinach

A rustic, one-pan chicken dish focused on fresh ingredients and bold heat.

Here is the recipe

Ingredients:

  • 6–7 medium chicken pieces

  • 4–5 small onions

  • 4–5 garlic cloves

  • 2 tomatoes, cut int0 4 pieces

  • A small bunch of baby spinach

  • 4–5 tbsp oil

  • 2 tbsp chilli flakes

  • Salt to taste



Method

  1.  Heat the oil in a heavy-bottomed pan over high flame. Add the chicken pieces and salt. Sear until deeply browned on one side, then flip and brown the other side. This creates a "crust" that locks in flavor.

  2.  Reduce the flame to medium. Add the chopped tomatoes, onions, and garlic cloves directly on top of the chicken. Cover with a lid. The steam from the tomatoes will soften the aromatics and finish cooking the chicken through.

  3.  Once the chicken is tender and the tomatoes have broken down into a light sauce, add the spinach. Cover again for 1–2 minutes just until the spinach wilts.

  4.  Give it a final stir. (NB: be careful not to overcook the spinach so it stays bright green). Sprinkle with chilli flakes and serve hot with steamed rice.
