Chicken & Balcony Garden Spinach
A rustic, one-pan chicken dish focused on fresh ingredients and bold heat.

Ingredients:
6–7 medium chicken pieces
4–5 small onions
4–5 garlic cloves
2 tomatoes, cut int0 4 pieces
A small bunch of baby spinach
4–5 tbsp oil
2 tbsp chilli flakes
Salt to taste
Method
Heat the oil in a heavy-bottomed pan over high flame. Add the chicken pieces and salt. Sear until deeply browned on one side, then flip and brown the other side. This creates a "crust" that locks in flavor.
Reduce the flame to medium. Add the chopped tomatoes, onions, and garlic cloves directly on top of the chicken. Cover with a lid. The steam from the tomatoes will soften the aromatics and finish cooking the chicken through.
Once the chicken is tender and the tomatoes have broken down into a light sauce, add the spinach. Cover again for 1–2 minutes just until the spinach wilts.
Give it a final stir. (NB: be careful not to overcook the spinach so it stays bright green). Sprinkle with chilli flakes and serve hot with steamed rice.
